Meat Taco:
Carnitas. Mexican style pulled pork served on a corn tortilla with Cilantro and white onions.
Vegetarian Taco:
Re-fried Black Beans with rice served on a corn tortilla with cheese or sour cream white onions and cilantro.
Garnish is fresh limes and radishes
Possible Salsas:
Pico De Gallo
Basic red
red tomato
Charred tomatillo
Cooking and Serving.
Meat Taco:
Carnitas meat will be precook a day or two in advance. It is stored in solidified lard. At the event we will put it in the hot water trays. The lard will melt and you can just keep it hot. When a Carnitas taco is ordered we will take a portion and quickly fry it. throw it on a heated tortilla sprinkle the onions and cilantro on it and away it goes.
Veggie Taco:
Beans will be cooked in advance refrigerates, or frozen (We should taste unfrozen beans next to fresh and see if it is acceptable). We will need to see if the beans temperature can be maintained in the hot water baths. If it can we will use those, and if it can not we will use the mega burner to keep the beans hot. The rice will be made at the festival in the rice cooker. It could be that we use a hot water bath to keep the rice warm. I think this will depend on the volume of customers. To make we put a tortilla on the grill to heat it up. then throw portion of beans, rice, dairy, onions and cilantro on the tortilla and send it out.
